Depends on how it's prepared. I like to add some cardamom with the pumpkin pie spices, evaporated milk optional (I've made it with soy milk for my late mother and others who are/were lactose intolerant) but I refuse to make a vegan one.
I'll make pumpkin cheesecake as well for those who would rather have that for dessert.
Pumpkin cheesecake sounds great. I'm baking a pumpkin pie from scratch. I cooked the pumpkin last night and will be using a vanilla cookie crust with a few toasted pecans thrown in. Gotta have whipped cream with maple syrup on top.
Cardamom is a strange looking spice. Have you ever seen it in its shell?
Yes, I've seen it in its pods. Heck, I knew Bill and Ruthann Penszy (sifted spices with Bill a couple of times) as well as their daughter Pam and son-in-law Tom Erd. I've gone to The Spice House when I can (as well as could afford to since I cannot use their online service [identity theft sucks].) The best way to describe the stores is a one-story house selling nothing but bulk herbs and spices along with salt and pepper mills as well as mortar and pestle sets. I can give you their web address if you'd like.
The shops have been featured on several television shows and on YouTube in case you're interested (Tom Erd's a bit "interesting" to say the least, especially when he was interviewed about their hot salt "Vulcan's Fire Salt" for a Chicago cooking segment along with the chef at Heaven on Seventh.)
